Rename mkdocs/ to docs/ and switch font to IBM Plex Sans + JetBrains Mono#201

The project moved off mkdocs to zensical, so the directory name was misleading. Rename `mkdocs/` to `docs/` (the universal convention) and update every reference: zensical.toml, scripts/post_zensical.py, the README gallery image links, AGENTS.md, .gitignore, and the prep-release skill (which also still pointed at a long-gone `mkdocs.yml`). Also switch the docs font pair to match koaning.io: IBM Plex Sans for body text and JetBrains Mono for code, replacing Geist / Geist Mono. Co-Authored-By: Claude Opus 4.7 <noreply@anthropic.com>
